Poor Mans Prime Rib

“Poor Man’s Prime Rib” is a term used for a more affordable cut of meat that is prepared using a method similar to cooking prime rib. While it may not be an actual prime rib roast, the method can yield a tasty and budget-friendly alternative. Here’s a recipe for a “Poor Man’s Prime Rib”:

Poor Man’s Prime Rib Recipe:

  • 1 boneless beef chuck roast (3 to 4 pounds)
  • Salt and black pepper to taste
  • Garlic powder
  • Onion powder
  • Dried thyme
  • 2 tablespoons vegetable oil
  • 1 cup beef broth
  • Optional: Worcestershire sauce

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Season the Roast:
    • Pat the chuck roast dry with paper towels. Season it generously with salt, black pepper, garlic powder, onion powder, and dried thyme. Rub the seasoning into the meat.
  3. Sear the Roast:
    • Heat vegetable oil in an oven-safe skillet or roasting pan over medium-high heat. Sear the chuck roast on all sides until browned. This step helps develop flavor.
  4. Prepare the Broth:
    • In a bowl, mix the beef broth with a splash of Worcestershire sauce (if using).
  5. Roast in the Oven:
    • Place the seared chuck roast in the preheated oven. Pour the prepared beef broth mixture over the roast.
  6. Cooking Time:
    • Roast for about 20 minutes per pound or until the internal temperature reaches your desired level of doneness. Use a meat thermometer to check for doneness. For medium-rare, aim for an internal temperature of around 135°F (57°C), and for medium, around 145°F (63°C).
  7. Resting Time:
    • Once done, remove the roast from the oven and let it rest for 10-15 minutes. This allows the juices to redistribute.
  8. Slice and Serve:
    • Slice the roast into thick slices and serve with any juices from the pan as a makeshift au jus.

This method produces a flavorful and tender roast, similar in essence to prime rib. While it might not have the same level of marbling as prime rib, it can be a more budget-friendly option for a special meal. Pair it with your favorite side dishes for a delicious dinner.
