Fried chicken

Fried chicken is a beloved dish known for its crispy and flavorful coating. Here’s a basic recipe for making delicious homemade fried chicken:


For the Chicken:

  • 3-4 pounds chicken pieces (drumsticks, thighs, wings, breasts)
  • Salt and pepper to taste
  • 1 cup buttermilk (or substitute with regular milk mixed with 1 tablespoon of vinegar or lemon juice)

For the Coating:

  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For Frying:

  • Vegetable oil for frying


  1. Prepare the Chicken:
    • Season the chicken pieces with salt and pepper. Place them in a bowl and pour the buttermilk over the chicken. Ensure each piece is well-coated. Let it marinate for at least 30 minutes to overnight in the refrigerator.
  2. Prepare the Coating:
    • In a separate bowl, combine flour, paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and pepper. Mix well.
  3. Coat the Chicken:
    • Remove each piece of chicken from the buttermilk, allowing excess liquid to drip off. Coat the chicken in the flour mixture, pressing the coating onto the chicken to adhere well.
  4. Heat the Oil:
    • In a large, deep skillet or Dutch oven, heat enough vegetable oil to submerge the chicken pieces. Heat the oil to around 350°F (175°C).
  5. Fry the Chicken:
    • Carefully place the coated chicken pieces into the hot oil, a few at a time. Fry until the chicken is golden brown and the internal temperature reaches 165°F (74°C). This usually takes about 12-15 minutes, depending on the size of the pieces.
  6. Drain and Rest:
    • Once cooked, use a slotted spoon to transfer the fried chicken to a plate lined with paper towels to drain excess oil. Let the chicken rest for a few minutes.
  7. Serve:
    • Serve the crispy fried chicken hot. It’s delicious on its own or with your favorite sides.
