Keto Meatloaf – gluten free


This Old Fashioned Keto Meatloaf is incredibly juicy and flavorful. Serve it alongside some mashed cauliflower and gravy and you’ve got yourself the perfect keto comfort food. Made with ground beef, and ground Italian sausage, combined with garlic, homemade dry onion soup mix, and tomato paste, it’s a quick and easy budget-friendly meal, made with common every day ingredients.

Ingredients in low carb meatloaf

This section contains important notes about some of the ingredients I used in this keto meatloaf recipe. For exact amounts, the full ingredient list and recipe, be sure to scroll to the bottom of the post.

  • Ground Beef: Ground beef is always the star of the show when it comes to meatloaf, but this is also excellent with ground bison or buffalo. (Check out my Stuffed Chicken Parmesan Meatloaf Recipe)
  • Ground Italian Sausage: You can use spicy or mild Italian sausage. You can even substitute a plain ground pork, but if you do, I would recommend adding additional onion soup mix. (Try these Keto Sausage Balls)
  • Dry Onion Soup Mix: For this low carb meatloaf recipe, I like to make my own Dry Onion Soup Mix. However, you can also use a packaged mix. Simply replace the ¼ cup homemade, with one package dried soup mix.
  • Tomato Paste: If you do not have tomato paste, you can also use ketchup. Both make for a delicious meatloaf. (This is my favorite clean ingredient low carb ketchup brand) code PEACE for 10% off
  • Worcestershire Sauce: Worcestershire is tangy, savory, sweet, and salty all at the same time and adds a nice umami flavor. You can also use coconut aminos or soy sauce in its place. To make this a Whole30 meatloaf recipe, use coconut aminos. This is my favorite brand.
  • Garlic: If you ask me, I say the more garlic, the better! If you do not have fresh garlic, you can substitute garlic powder or even dried minced garlic.
  • Pork Rinds: The pork rinds in this keto meatloaf recipe act as a binder. If you do not have pork rinds, you can also substitute almond flour, or even a mix of grated parmesan cheese and almond flour.

How to make old fashioned keto meatloaf

STEP 1: Preheat the oven to 400°F. Add all of the ingredients to a large mixing bowl.

STEP 2: Mix until all ingredients are well incorporated.

STEP 3: Transfer the mixture to a large loaf pan and bake for 45 minutes.

STEP 4: Optional: Spread some tomato paste or ketchup across the top of the meatloaf and bake for 10 additional minutes.

Recipe Tips and Variations

  • Storage: Store leftovers in the refrigerator for up to 4 days. (These are my favorite storage and meal prep containers)
  • Make it Whole30: To make this a Whole30 compliant meatloaf recipe, swap out the Worcestershire sauce for coconut aminos and make sure that the beef bouillon powder you use to make the dry onion soup mix is compliant. If you can not find a compliant bouillon, you can use beef bone broth powder in its place.
  • Make Bacon Cheeseburger Meatloaf: Add some chopped up crispy bacon and some sharp cheddar cheese into the meatloaf mix for a delicious cheeseburger variation.
  • Bacon Wrap it: After mixing the meatloaf, form it into a loaf and wrap it in bacon before putting it in the loaf pan.
  • Make BBQ Meatloaf: Instead of using tomato paste or ketchup in the mix and on top, swap it out for barbecue sauce. (This is my favorite low carb BBQ sauce)

Frequently Asked Questions

What is the purpose of the pork rinds in this recipe?

The pork rinds act as a binder in place of the breadcrumbs or crushed crackers that you would find in a traditional meatloaf.

Can you make meatloaf without eggs?

Eggs are also used as a binder, but do not add any flavor to the meatloaf. You can omit them and it will still be delicious. It just might not hold its shape as well.

Can you make meatloaf ahead of time?

Yes, absolutely. When I make meatloaf, I always make a double batch – one for now and one for later. I mix all the ingredients and then freeze them raw. When I am ready to eat it, I just thaw and cook.
