Because sometimes life deserves to get a bit easy-going, especially with a toddler around. And because these brownies didn’t turn out bad at all.

Truth be told, we could hardly stop ourselves from eating the whole batch in one evening—the two of us. The toddler already being fast asleep in her baby cot.

In Hope of the Keto Brownies Mix Becoming Available Again

While writing this keto brownies mix review, we’ve noticed that it seems to have become unavailable in stores.

We’re keeping our fingers crossed for the mix to be continued. We would love to take it easy again occasionally if chocolate cravings kick in again and we find ourselves short on time.

Not that other brownie recipes take an enormous amount of your day, though. Classic chocolate brownies, keto avocado bronies, or pumpkin brownies – these are still our favorite no-brainers, so go ahead and try them all.

Only 3 Ingredient Keto Brownies Recipe

Well, not really. Of course, the keto brownie mix includes all sorts of ingredients to make the brownies, not only chocolatey and sweet but also sticky, fudgy, and flavorsome in all ways.

But, basically, you only need eggs and butter, besides the mix.

Besides adding eggs and butter, use the ideas on the backside of the packaging to add other ingredients and enhance the brownies. Or use your imagination.

How to Make So Nourished Keto Brownies

The instructions on the packaging are straightforward:

First, preheat the oven and combine the brownie mix with two large eggs and ½ of melted butter.

Nevertheless, I would make sure the eggs are well beaten before gently mixing them with the dry mix and the melted butter. Use your rubber spatula.

After mixing the dry mix into the eggs and melted butter, you’ll probably notice that the resulting batter is not pourable. That’s the most common complaint I’ve seen from users.

However, we continued with transferring the batter into a greased 8-inch baking pan.

Before transferring the batter, you can, of course, add optional ingredients like chocolate drops (or chopped-up chocolate) and walnuts.

OK, time to transfer the batter into a baking pan. Here, I was questioning the consistency but didn’t bother too much.

Press the batter into the pan.

Bake for 20 to 22 minutes and let the brownies cool for a few minutes before cutting them into 12 pieces.

Additional Notes

I baked the brownies for 25 minutes. When they cooled to room temperature, they seemed like an additional 5 minutes of baking wouldn’t hurt. I think they would still come out sticky enough, but not raw-like.

In reviews, I’ve noticed some users adding heavy cream to the mixture to make it pourable. Then they baked the brownies for 30 or even 40 minutes. It is something to try the next time.

We found the end result to be a tad oversweet for our palate. Still, I’ve seen users claiming the mixture was not sweet enough. It’s something that happens a lot in the low-carb community.

Even my own somewhat dated recipes seem too sweet to me and too sweet for some readers, as well. It is not easy to find the right balance for everyone, especially using low-carb sweeteners.

Whatsoever, in the end, we liked the consistency and the flavor of the brownies. I would definitely make them again, maybe tweaking a thing or two.

Instructions 

  • Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan with coconut oil.

  • Melt butter and beat eggs until foamy.

  • In a medium bowl, combine the brownie mix with eggs and butter with a rubber spatula. Stir well until smooth.

  • Transfer the batter into the greased baking pan evenly.

  • Bake for 20 to 22 minutes.

Notes

Add a few minutes of baking if you’ve added more liquid to the batter to make it runnier (for example, heavy cream).
Optionally, add nuts of choice to the batter.
For even more chocolate, add sugar-free chocolate chips or dark chocolate chunks.
