  • BACON: What would a Jalapeno Popper Chicken Salad be with the addition of chopped smokey bacon? If you enjoy the classic flavor combo of Jalapeño poppers, try my Jalapeno Popper Chicken Soup Recipe
  • JALAPEÑO: If you are not a fan of jalapeños or do not like spicy foods, you can simply omit them. If you want to mix things up a bit, this is also delicious with red bell peppers, Serrano peppers, or even poblano peppers. Check out my Buffalo Chicken Jalapeno Popper Recipe
  • MAYONNAISE: The mayo in this recipe and a nice cooling, creaminess. If you are not concerned with keeping this a dairy free chicken salad recipe, try mixing some softened cream cheese in with the mayo. For even more flavor, try making it with my Roasted Garlic Mayonnaise Recipe.

Frequently Asked Questions

How do you roast jalapeños?

There are a couple of ways to roast the jalapeños. If you have a gas range, you can roast them directly over the flame, turning them frequently so they do not burn. They are done when they are charred and slightly blistered. Alternatively, you can lay them on a baking sheet and put them under the oven broiler for 3 to 4 minutes.

What is a good substitute for mayonnaise?

If you are not a fan of mayo, or cannot have eggs, Greek yogurt makes a great substitution in this recipe. If you substitute with yogurt, I recommend omitting the vinegar.
