No-Bake Peanut Butter Jelly Icebox Cake

Super delicious No-Bake Peanut Butter Jelly Icebox Cake.
 This is one of those recipes that is way easier to execute than it looks! 



Base Filling:

  • 2 cups of Heavy Whipping Cream
  • 1 cup (Wondroselysweet) (divided)
  • 2 cups of Strawberries (mashed)
  • 1/4 cup of water


  • 1/4 cup of (Ketoandco) PB Granola
  • 8 strawberries (halved)
  • 1/4 cup of Peanut Butter
  • 1/4 cup Wondrous Sugar Replacement
  • 1 tbs of melted peanut butter for drizzling

Springform Pan


Add PB Granola to a food processor and grind down chunks. Add the processed granola to a bowl with the melted peanut butter and Wondrous sugar replacement. Mix until combined. Line the bottom of the Springform pan with the crust mixture. Set aside. 
Add the heavy whipping cream and 1/2 cup of Wondrous to a bowl. 
Whip until heavy whipping cream forms, Set aside. For this next part, you can use 1 cup of sugar-free strawberry jelly or make your own filling, following this: Mash 2 cups of strawberries and add to a saucepan with 1/4 cup of water and 1/2 cup of Wondrous. 
Bring to a boil and then lower to bubbling. Let cool to the touch. Gently fold in the strawberry mixture into the whipped cream. 
Add filling over the crust. Place in the freezer for 4 hours until solid.  When set adds toppings. I decorated with a PB drizzle, granola bits, chopped strawberries, and peanut butter balls. 
To Make the PB balls, mix 1/4 cup of Peanut Butter and 1/4 cup Wondrous Sugar Replacement. 
Roll into small balls and done. 
Slice and Enjoy! (Keep stored in the freezer)
