What do you do with vegetables that already have their first freshness behind them? My broccoli was already crying out for mercy so I revived it and that’s how I made broccoli pancakes with bacon.
They taste like a piece of garlic with garlic sauce.


Broccoli pancakes

  • -250g broccoli
  • -3 eggs
  • -70g of smoked bacon
  • -70g of grated cheese, Cheddar, or other
  • -170g natural Philadelphia cheese
  • -2 cloves of garlic
  • -1 small onion or 1/2 large onion
  • -50g of almond flour
  • – salt and pepper to taste
  • – clarified butter for frying


  1. Wash the broccoli and rub it on a grater together with the stem. You can also crush it in a food processor. 
  2. In a bowl, mix the eggs with Philadelphia cheese until uniform. Then, mixing by hand, add the rest of the ingredients. 
  3. First, the garlic squeezed through the press and the onion, cut into small cubes, and then the bacon also cut into small cubes. To this add grated cheese and flour. 
  4. Finally, shredded broccoli, salt, and pepper.
  5. Fry over medium heat in a preheated pan for about 5 minutes on each side.

▪️ Garlic sauce

  • -200g of 24% thick cream or yogurt
  • -3 cloves of garlic
  • -100g green cucumber grated on a coarse mesh
  • – dill, any amount
  • – salt and pepper to taste

(Recipe makes about 10 pieces of the given ingredients)
