KETO LEMON CAKE WITH BLACKBERRY JAM AND LEMON CURD FILLING

Made another cake, just because! This one is a lemon cake, with a homemade blackberry jam and homemade lemon curd filling. ⠀

Ingredients 

Cake:

  • 6oz softened butter⠀
  • 3/4 cup granular swerve⠀
  • 5 eggs⠀
  • 1 tsp vanilla ⠀
  • 3/4 cup buttermilk ⠀
  • 1.5 cups almond flour ⠀
  • 1/2 cup coconut flour ⠀
  • 1/3 cup whey protein powder ⠀
  • 1.5 tsp baking powder ⠀
  • 1/2 tsp baking soda ⠀
  • 1/2 tsp xanthan gum⠀
  • Juice and zest of half a lemon ⠀
  • Pinch of salt⠀

Instructions 

Pre heat oven to 350°. Mix flours, whey protein, baking powder and soda, xanthan gum and salt and set aside. Mix butter, swerve, lemon juice and zest, and vanilla until fluffy. Add 2 eggs and beat until combined. Add 1/3 of the dry mix, followed by 1 egg and then 1/4 cup of buttermilk. Repeat until everything has been added and combined. ⠀

Divide the batter into 2 parchment lined 7″ pans. Bake for 30-40 mins. ⠀

BlackBerry jam:⠀

  • 1 cup frozen blackberries⠀
  • 2 tbsp allulose⠀
  • 1/2 packet granular gelatin⠀
  • Juice of half a lemon ⠀

Mix everything in a saucepan on medium heat until desired consistency. Place in fridge until ready to use. ⠀

Lemon curd:⠀

  • 3 eggs⠀
  • 1/2 cup powdered swerve ⠀
  • 1/4 fresh lemon juice⠀
  • 2 tbsp grated lemon zest⠀
  • 4 tbsp butter⠀


In a bowl over simmering water, whisk eggs, sweetener, and lemon juice and zest. Whisk until it thickens, about 10 mins. Remove from heat and whisk in the butter until smooth and creamy. ⠀

Frosting:⠀

  • 1 cup heavy whipping cream⠀
  • 1/4 cup confectioners swerve ⠀
  • Pinch of xanthan gum⠀


Mix everything until desired frosting consistency, about 4 mins. I divided it into bowls and added a few different colors of food coloring. ⠀

Assemble:
 I cut each cake into 2 layers, so 4 total. Cake, lemon curd, cake, jam, cake, lemon curd, cake. Then frost and pipe with flowers.
