Delicious keto crispy zucchini fritters with veggies in a hearty tomato sauce.
These yummy keto zucchini fritters are easy to make, packed with veggies & tomato sauce and downright delicious! They’re delicious served as a keto side dish or appetizer with homemade ranch dressing. 
If you’re looking for an easy veggie recipe to use up all that zucchini, you’ve got to try this perfect one.

Recipe makes 3 servings


For the fritters:

  • – 450g (15.87 oz) zucchini
  • – 150g (5.291 oz) carrots
  • – 2 eggs
  • – 60g (2.116 oz) cream cheese
  • – 60g parmesan
  • – 1tbsp coconut flour
  • – 1 tsp soft butter
  • – salt
  • black pepper
  • -paprika powder
  • -garlic
  • -parsley

For the sauce:

  • – 1 yellow bell pepper
  • – 200g (7.055 oz) cauliflower
  • – 200g broccoli
  • – 1 white onion
  • – 300g (10.58) marinara sauce
  • – salt
  • -black pepper
  • -garlic
  • -basil


  1. – for the fritters, clean the zucchini and carrots and put them, together with the rest of the ingredients, in a food processor until combined. Rinse the mix from water and put it in the fridge for about 20minutes.
  2. – remove from the fridge and form little disc shapes. You can now either place them on a baking tray and bake them in the oven or fry them in a big pan with some olive oil until they are nice and crispy
  3. – for the sauce, clean and chop all the veggies roughly and fry them in a pan for a few minutes
  4. – lower the heat and add the marinara sauce and herbs/spices
  5. – let it simmer on low for about 5 more minutes
  6. – serve together.
