Absolutely delicious Fiesta Breakfast Lasagna using my favorite Cut Da Carb flatbreads. 
I’ll cut straight to the chase with the recipe for this one y’all, easy to throw together and always leftovers. Perfect breakfast option.

You will need to prepare this Fiesta Breakfast Lasagna


  • 3 Cut da carb flatbreads
  • 1lb breakfast sausage
  • 1/2 lb chorizo
  • 2 jalapeños
  • 1/2 onion
  • 10 large eggs 
  • 1.5 C half and half
  • 12 oz shredded Colby jack cheese(divided)
  • salt and pepper

Spray a 9×13” casserole pan with non-stick spray.


  1. Start by frying the sausages in a skillet until browned. Add diced onion and jalapeño and fry until cooked through. 
  2. In a large bowl whisk eggs, half and half, salt, pepper, and then add 8oz of the shredded cheese. 
  3. To assemble lay one whole cutdacarb flatbread at the bottom of the dish. Add a layer of the meat mixture and half of the egg mixture. Repeat one more time and end with a flatbread on top. 
  4. Spray the flatbread with oil and season with salt. Cover with remaining cheese. 
  5. Bake at 350 45-60 minutes or until an inserted knife comes out clean. 
  6. Check for bubbling of flatbread once in a while and if it occurs just simply pierce with a knife  Once this comes out of the oven top with anything you like, I used queso, avocado, red onion, and cilantro.
