How to make our Keto Beef stew

Ingredients :

  • 4 lbs chuck roast or tri-tip
  • 2 tbsp avocado oil
  • 3 cups of beef broth
  • 2 tbsp garlic minced
  • 1 yellow onion
  • 3 carrots
  • 5 ribs of celery
  • 2 large bell pepper
  • 3 bay leaves
  • 3 bunches of radishes
  • 1 can tomato sauce
  • 2 tbsp tomato paste
  • Salt and pepper to taste
  • Xanthan gum to thicken

Instructions :

1- Cut beef in 2in cubes. chop all the veggies about the same size as the beef.

2- Add avocado oil and sauté onions and beef and brown for 7-10 mins. Add, garlic, salt, pepper, tomato paste, tomato sauce, bay leaves and beef broth.

3- Set instant pot to high pressure 20 mins then, quick release. Take out meat and put in a separate container.

4- Add carrots, celery, bell peppers, and radishes into the IP and set high pressure for 7 mins then, quick release. – Add beef back into instant pot and set to sauté, bring to a boil and sprinkle 1 tbsp xanthan gum in a very light layer to prevent clumping. Stir around and repeat until desired consistency
