Low Carb Keto Garlic Bread

To make a keto garlic bread that is closer to what you would get at an Italian restaurant, I developed an almond flour-based bread just for this recipe. 
It is higher in carbohydrates than simple Keto Bread but is more like a traditional bread and very easy to make, with one
caveat: make sure to grind the psyllium husks to a very fine powder and weigh all the ingredients. 
This will ensure that the dough rises properly and the bread doesn’t get hollow and gummy. I use Viva Natural’s psyllium husks and grind them in a blender until they’re fine and powdery and half their original volume. 
(Note: If you use a different brand, you may not get the same results.) If you weigh all the ingredients and grind the psyllium husks to powder and the bread still doesn’t rinse properly or has a gummy texture, try grinding the husks a second time when you make the bread again. 

Because this bread is higher in carbs, please consume it in moderation. If you need a low-carb garlic bread, you can use a loaf of Keto Bread instead.

How To Make This Low Carb Garlic Bread?

Ingredients:

Bread

  • 3 cups (280 g) blanched almond flour 
  • ½ cup plus tablespoons (90 g) psyllium husk powder   (no substitutes) 
  • 1 tablespoon baking powder 
  • 1 teaspoon fine sea salt 
  • 6 large egg whites (180 g) 
  • 5 tablespoons (90 g) apple cider vinegar 
  • 1½ cups (340 g) boiling water 
  • cloves garlic, minced 
  • ½ cup melted unsalted butter, ghee, or extra-virgin olive oil Chopped fresh basil or parsley leaves, for garnish.

Instructions:

1. Preheat the oven to 350°F. Grease an 8 by 4-inch loaf pan.

2. Place the almond flour, psyllium husk powder, baking powder, and salt in a medium-sized bowl and mix well to combine. Stir in the egg whites and vinegar and mix until a thick dough forms. Add the water and mix until the dough firms up.

3. Form the dough into a loaf and place it in the greased pan. Bake for 60 to 75 minutes, until the bread is firm to the touch and golden brown. Remove from the oven and allow to cool completely in the pan.

4. When the bread is cool, place an oven rack in the top position and turn the broiler to high. Cut the cooled bread into 20 slices. Place the slices on 2 rimmed baking sheets.

5. In a small bowl, mix the garlic with the melted butter. Brush the mixture onto the slices of bread, about 2 teaspoons per slice, and place under the broiler for 2 minutes, or until the bread is golden brown. Remove from the oven and garnish with parsley. Slice into triangles and serve immediately.

Variation: 
cheesy garlic bread. Before garnishing the garlic bread and cutting it into triangles sprinkle each piece with a tablespoon of shredded mozzarella or grated Parmesan and set under the broiler for a minute or two to melt the cheese.
