Keto Waffle Fries with Cheese Sauce

How To Make Our Keto Waffle Fries?

Ingredients:

Waffle fries

  • 3 cups shredded zucchini (about 2 medium) 
  • 1 teaspoon fine sea salt 
  • 1 cup powdered Parmesan cheese 
  •  2 tablespoons unsalted butter or coconut oil, melted but not hot 
  • 2 large eggs


Cheese sauce

  • ¼ cup (½ stick) unsalted butter 
  • 1½ ounces cream cheese (Used Philadelphia)
  • ¼ cup beef or chicken bone broth, homemade or store-bought 
  • 1 cup shredded sharp cheddar cheese (about 4 ounces) 
  • ¼ cup grated Parmesan cheese (about 1 ounce) 
  • Fine sea salt and ground black pepper


Instructions:

1. Heat waffle iron to high heat. You can buy it from Amazon (here)

2. Make the batter for the waffle fries: Place the shredded zucchini in a colander in the sink and sprinkle with the salt. Allow to drain for 4 minutes, then squeeze out any excess moisture. Place the zucchini in a medium-sized bowl. Add the powdered Parmesan, melted butter, and eggs. Mix well.

3. Cook the waffle fries: Grease the hot waffle iron with coconut oil spray. Place 3 tablespoons of the zucchini mixture in the center of the iron and close the top. 
Cook for 3 to 4 minutes, until the waffle, is golden brown and crisp. Remove from the waffle iron, set in a warm oven to keep warm, and repeat with the remaining batter, making a total of 8 waffle fries.

4. Make the cheese sauce: Melt the butter in a medium-sized saucepan over medium heat. Stir in the cream cheese and broth. Cook, stirring, for 2 minutes, or until the sauce has thickened a bit. Reduce the heat to low and add the cheddar and Parmesan cheeses, stirring until the cheeses have melted. Season with salt and pepper to taste. 
Remove from the heat, pour over the waffle fries, and serve. These
are best served fresh.
