Keto Maja Blanca
Maja Blanca: creamy, soft and light Filipino coconut pudding made from coconut milk, milk, sweetener, and corn kernel.
Let’s make the KETO MAJA BLANCA

Ingredients:
- 540ml coconut cream (I used 2 cans of Ayam pure coconut cream)
- 2 1/2 tsp beef gelatin powder or just regular gelatin powder
- 1/2 tsp vanilla or corn extract
- 1-2 tsp granular sweetener (or to taste)
- Shredded coconut or coconut flakes, toasted
Instructions:
1. Pour coconut cream in a saucepan and add gelatin powder. Mix and leave to sit for 2min (room temp)
2. Place the saucepan on the stove over medium heat. Add vanilla and sweetener, stirring constantly. Don’t let it boil, immediately remove from heat. Allow to cool before pouring into the molds (I used silicone)
3. Pour cooled cream mixture into the molds and let set in the fridge for at least 2hrs or until set.
4. Sprinkle with toasted coconut before serving.
