I woke up craving a potato hash which is super weird but here’s something even better. 

Ingredients:


– 1 medium zucchini
– 2 eggs
– 1 Tbsp  ranch seasoning
– 1 Tbsp nutritional yeast
– 1 Tbsp ground flaxseed 
– 1 Tbsp ground psyllium husk



Instructions:


1 – Grate the medium zucchini, place in a paper towel and squeeze any excess water from it.
2 – Add all the ingredients to a bowl, mix and let it sit for 5 minutes to let the psyllium husk bind
3 – Spoon into a hot pan with avocado or oil of choice.
