These cookies are soft and fudgy in the middle and are the perfect sugar-free – Halloween !


  • 1/2 cup butter, softened
  • 1 cup Lakanto monkfruit sweetener
  • 1 egg + 2 egg yolks
  • 1 Tbsp vanilla
  • 1/4 cup Daisy sour cream
  • 2 Tbsp Hershey dark chocolate cocoa powder
  • 1/3 cup almond flour
  • 1/3 cup Anthony’s coconut flour
  • 1/3 cup oat fiber
  • 1/4 tsp baking powder
  • 1/2 tsp Wilton black icing color (optional)


Beat butter and sweetener until creamy. Mix in eggs and vanilla. Add remaining ingredients and beat until incorporated. (I wanted my cookies to be really dark, so I added the food coloring) Using a cookie scoop, mound on to a parchment covered cookie sheet. With fingers ~ flatten cookies to 1/2 inch thickness. Bake at 350° for 12 minutes. (Cookies will be soft and are fragile until they cool. Wait to remove from pan for 5-10 minutes!)

Buttercream Frosting:

  • 1/2 cup butter, softened
  • 2 cups Swerve confectioner’s sweetener
  • 3 Tbsp unsweetened vanilla almond milk
  • 1/2 tsp vanilla
  • sprinkle of salt

Cream together butter and sweetener. Mix in the rest until smooth

Royal Icing (for decorating):

  • 1/2 Tbsp Wilton meringue powder
  • 1/2 cup Swerve confectioner’s sweetener
  • 2 Tbsp water
  • 1/2 tsp vanilla
  • 1/4 tsp Wilton black icing color

Whisk all together until smooth. Pipe on to cookies using a round decorating tip
